It belongs to the category of honeydew honey and its production requires the existence of the insect Marchalina hellenica (cotton). Pine honey comes from the honey secretions (amino acids and sugars) of this insect.
Taste and aroma: It is not very sweet, leaving a wonderful taste and medium intensity aroma.
Color: The color varies depending on the season of production. It is lighter in spring and darker in autumn.
Crystallization: It is difficult to crystallize due to its low content of sugars and especially glucose.
Nutritional value: It is honey with high nutritional value, since in its composition it consists of a large number of nutrients and is rich in minerals and trace elements (calcium, copper, magnesium, zinc, iron, etc.), proteins and amino acids. It has fewer calories than flower honey.
